Special Butterfish Gunkan Sushi Recipe ─ How To Make Sushi

In this recipe, I show how to make a tomato gell sheet that can be used in sushi making and I go on to show a great example of that, but this same sheet can be made with basically any other liquid to archive different flavors, I would recommend experimenting with Dashi stock gell sheets they would work well with sushi.

Ingredients for this recipe:
- 1kg tomatoes
- 10g salt

- 10g butterfish
- shimeji mushrooms http://amzn.to/2zXKe2O
- wasabi http://www.makesushi.com/real-wasabi-...
- cooked and seasoned sushi rice http://www.makesushi.com/how-to-make-...
- soy sauce

Why use 2 gelling agents? I used the combination of Agar Agar and locust bean gum because the Agar Agar is firm but brittle if you try to make a sheet with just that it is impossible to pick up and tears very easily, but if you add a little locust bean gum which is much more elastic it gives the sheet just the right amount of flexibility.
