Understanding the kernel of wheat, is at the core of understanding flour, which might sound like a grind, but it’s useful to understand dough, which is absolutely needed to understand bread itself, so sit back, and don’t be so sour.

2 main categories of wheat in the world :
- common wheat : Triticum aestivum :
- durum wheat : Triticum durum :

BRAN ; the Outside rich in fibers and minerals 14% in weight
ENDOSPERM : 83% in weight
last time, he said Fuck, now he says sperm, what’s the next one ?
No, I Endosperm is the big central part, rich in starch so carbs, and proteins,
GERM : 3% in weight, rich in vitamins and good fats

Ash content : measures the amount of mineral content that remains in the flour after milling.
As mineral mostly is on the outside of the kernel, the higher the ash content , the more bran and outer layers you’ll get.

Lower protein content is great fro making cookies and pies, and short pastries : THAT crumbly texture. Higher protein content = higher gluten in the dough, is great for baking bread , or even pizza : THAT chewy texture

Which Flour for Baking Bread ? Sourdough Bread Series ─ Alex French Guy Cooking

Ooey gooey apple turnovers made out of cinnamon roll dough.

Here is what you'll need!

Fried Cinnamon Roll Apple Turnovers
Makes 9-10 turnovers

INGREDIENTS
2 Granny Smith apples, chopped
2 tablespoons flour
2 tablespoons brown sugar
1½ tablespoons cinnamon
1 pack of 5 large cinnamon rolls
1 egg
Vegetable oil
Cinnamon sugar for coating


PREPARATION
Heat 2 inches of vegetable oil in a pot to 350˚F/120˚C.
Pat chopped Granny Smith apples dry with paper towel.
Mix in brown sugar, cinnamon, and 1 tbsp of flour.
Open your cinnamon rolls and reserve icing.
Cut the cinnamon rolls in half and roll out each half into a 2 in x 2 in square.
Place a dollop of icing and apple mixture onto the square.
Beat egg in a bowl and brush the sides of the square.
Fold the square into a turnover shape and seal closed with your finger, making sure to get the air out from inside.
Primp the edges with a fork.
Place turnovers into oil and fry for about 2 minutes on each side or until golden brown.
Toss in cinnamon sugar.
Serve and enjoy!

Betty demonstrates how to make Sriracha Spiced Nuts. This is a blend of nuts, coated with a sweet and peppery sauce and toasted in the oven.

Sriracha Spiced Nuts

2 tablespoons honey
1 tablespoon coconut oil
1 tablespoon sriracha sauce
Ă‚Ë to 1 teaspoon salt, as desired
3 cups raw nuts (Use a single type of nut or a blend of mixed nuts.)

In a medium-sized saucepan, melt honey and coconut oil over low to medium heat. Remove from heat and stir in sriracha sauce and salt. Add nuts, and stir to coat. Place in a single layer in a shallow baking dish or pan that has been lined with parchment paper. Bake at 325 degrees (F) for about 10 minutes or more, stirring after 5 minutes. Remove from oven when nuts are heated through. Let cool. Break nut clumps into serving-sized pieces and store in a covered container at room temperature.

Mosaic Sushi (Checkerboard Sushi)

Difficulty: Medium
Time: 15min
Number of servings: 2 people = 14cm (5.5inch) square Bento box

Ingredients:
350g (12oz) cooked Japanese rice
Sushi vinegar
* 1.5 tbsp. vinegar
* 1/2 tbsp. sugar
* 1/2 tsp. salt
toppings of your choice
Wasabi soy sauce if necessary

Directions:
1. Place cooked Japanese rice in a bowl. Add Sushi vinegar while the rice is hot and slice through rice using rice paddle to separate the grains. (Cool the rice before you use.)
2. Place the Sushi rice in a Bento box then press down flat with a rice paddle or a spoon. *You can also remove the rice onto a plate like a cake.
3. Divide the Sushi rice into 16 square portions.
4. Place the toppings of your choice. Eat with Wasabi soy sauce if necessary.

Here is what you'll need!

Cheesy Taco Breadsticks
Servings: 5-6

INGREDIENTS
1 small onion, diced
1 tablespoon garlic, minced
1 pound ground beef
2 tablespoons taco seasoning
1 pound pizza dough, rolled out into a rectangle
1 cup Mexican cheese blend
1 tablespoon olive oil

Salsa for dipping
Guacamole for dipping

PREPARATION
1. Preheat oven to 425˚F/220˚C.
2. Sauté onions and garlic until transparent. Add the ground beef and cook until browned. Remove from heat and set aside.
3. On a floured surface, cut the pizza dough 5 strips and place spoonfuls of the beef mixture into the middle of each strip, followed by the Mexican cheese blend.
4. Fold and pinch the dough around the cheese and meat along the entire strip, ensuring to close off the ends.
5. Brush each breadstick with olive oil and transfer to a baking sheet.
6. Bake for 10 minutes, remove from the oven and top each breadstick with more cheese. Bake for another 5 minutes or until the cheese is golden brown.
7. Enjoy!

African-Style Poached Eggs in Tomato Sauce
Servings: 4-5

INGREDIENTS
2 tablespoons olive oil
3 cloves garlic, minced
1 medium onion, diced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon turmeric
1 teaspoon paprika
1 teaspoon cumin
2 tablespoons harissa paste
2 tablespoons tomato paste
2 14-ounce cans of diced tomatoes
5 large eggs
Chopped parsley, to serve
Bread, to serve


PREPARATION
In a large cast-iron skillet, heat the oil over medium heat.
Add the garlic and onions, cooking until the onions are translucent and the garlic is starting to slightly brown.
Add the spices and harissa paste, cooking the spices until fragrant, about 1 minute.
Add the tomatoes and tomato paste and cook for about 10-15 minutes until the sauce has thickened to the point where pressing down with a spoon leaves an indent that holds its shape.
Taking the back of a large spoon, make 5 large indents into the sauce, using a left-to-right wiggling motion to ensure that the “walls” of the sauce are tall enough to hold an egg.
Crack the eggs into each of the indents, then cook over low heat for about 15-20 minutes until the eggs are cooked to your liking. To speed the process up, cover the skillet with a large lid.
Sprinkle with chopped parsley, remove from heat, and serve with crusty bread to mop up all the sauce

North African-Style Poached Eggs in Tomato Sauce (Shakshouka) ─ Tasty

These are the guardians protecting the promised land of the bears. They are not folk dancers.
We stocked up on the bear-shaped biscuits at the store because they were so cute. Then we made this no-bake cheesecake and named it "Guardian Cake". However they all fall down when the cake is cut... Please forgive these 31 guardians, who are not very dependable and merely strong in looks, because they are so cute.

*Recipe* (One 18 cm round mold)

1. Crumble 26 pieces of Ritz crackers.
2. Add 50g of melted unsalted butter to 1.
3. Press 2 flatly to the bottom of the mold, covering up the entire bottom surface.
4. Prepare parts for the bear's face. Sliced chocolate was used here.
5. Bloom 8g of powder gelatin with 45g of water.
6. Mix cream cheese, either at room temperature of heated about 30 seconds in the microwave, to a smooth consistency.
7. Add 70g of sugar to 6.
8. Add 200ml whipping cream to 7, and mix.
9. Add 30g lemon juice to 8, and mix.
10. Heat 5 for 30 seconds in a microwave, briefly mix to melt completely.
11. Add 10 to 9, and mix.
12. Separate 1 tablespoon and 3 tablespoon worth from 11.
13. Color 3 tablespoons removed in step 12 to brown color. Here, 7 drops of chocolate syrup was used to add color. 1 tablespoon saved in step 12 is kept as is.
14. Add the remainder from step 11 to 3 at once. It is best to do this through a sieve.
15. Rap the mold a few times on the counter to remove air bubbles and flatten the surface.
16. Draw the face of a bear on 15 using 4 and 13. Don't worry too much even if the image is not perfect.
17. Chill for 2-3 hours in a refrigerator.
18. Wrap the mold with warm towel to remove the cake.
19. Attach 31 bear biscuits to the perimeter of the cake.
20. Finished! Please, don't fall down. Keep on standing, Rocky!

お店に売っていた くまちゃんのビスケット、とてもかわいかったので買いだめ。で、こんなレアチーズケーキを作りました。名付けて『ガーディアンケーキ』。でも切り分ける時にパタパタと倒れていく・・・頼りなくて、見かけ倒しの31匹のガーディアンですが、かわいいので許してください。

*レシピ*(18センチの丸型 1個分)
1.リッツ 26枚を細かく砕く。
2.1に溶かし無塩バター 50gを加え混ぜる。
3.2を型の底に押しつけてしっかりと敷き詰める。
4.くまの顔に使うパーツの準備をする。今回はスライスチョコレートを使いました。
5.水 45gに粉ゼラチン 8gをふり入れて、ふやかしておく。
6.室温に戻すか、電子レンジで約30秒加熱してやわらかくしたクリームチーズをなめらかになるまで混ぜる。
7.6に砂糖 70gを入れ、混ぜる。
8.7に生クリーム 200mlを加え、混ぜる。
9.8にレモン汁 30gを加え混ぜる。
10.5を電子レンジで30秒加熱し、軽くかき混ぜて完全に溶かす。
11.9に10ううを加え、混ぜる。
12.11から大さじ1と大さじ3 取り分ける。
13.12の大さじ3 取り分けた生地を茶色に着色する。今回は、チョコレートシロップを7ぽとり して着色しました。12の大さじ1の方には着色しない。
14.3に11の残りを一気に流し込む。こしながら入れると良い。
15.台に数回、打ち付けて気泡を抜きながら平らにする。
16.15に4と13を使ってくまの顔を描く。歪になっても気にしない。
17.冷蔵庫で2〜3時間冷やす。
18.蒸しタオルを巻いて、型から取り出す。
19.31匹のくまちゃんビスケットをレアチーズケーキの周りに貼り付ける。
20.できあがり。お願〜い。倒れないで〜。立て!立つんだジョー!

Here is what you'll need!

FIVE-CHEESE MAC AND CHEESE as made by LAWRENCE PAGE
Servings: 5

INGREDIENTS
1 box of elbow macaroni
1 12-ounce can evaporated milk
3 eggs
½ cup unsalted butter
2 cups cheddar cheese, shredded and divided
1 cup mozzarella cheese, shredded
2 tablespoons feta cheese, crumbled
1 cup provolone cheese, cut into small pieces
½ cup smoked Gouda cheese, shredded
4 teaspoons salt, divided
2 teaspoons black pepper

PREPARATION
Preheat oven to 350˚F/180˚C.
In a large pot or dutch oven, cook macaroni according to package directions, salting the water with 2 teaspoons of salt. Drain and return to the warm pot.
Add butter to warm macaroni and mix until melted. Season with the remaining salt and pepper.
Add 1 cup of cheddar, mozzarella, provolone, Gouda, and feta cheese. Mix well.
Add eggs and evaporated milk, mix until fully incorporated.
Transfer to a 9x13-inch baking dish and top with the remaining cheddar cheese.
Bake in a preheated oven for 40-45 minutes, until the top has nicely browned.

Easy Pizza Cups
Servings: 12

INGREDIENTS
1 tube pizza dough
1 cup pizza sauce
1½ cups mozzarella cheese
Desired pizza toppings

PREPARATION
1. Preheat oven to 400˚F/200˚C.
2. Cut pizza dough into 12 square pieces and place in a greased muffin tin.
3. Place a spoonful of pizza sauce and some cheese into the bottom of each cup.
4. Fill with your favorite pizza toppings and combinations!
5. Bake for 20-25 minutes or until fully baked. If the tops are getting too brown too quickly, cover the pan with foil and put back into the oven for the remainder of the cooking time.
6. Enjoy!

Avocado Chickpea Salad
Servings: 4

INGREDIENTS
Dressing
2 tablespoons olive oil
¼ cup lime juice
2 teaspoons cumin
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon pepper
¼ cup cilantro, chopped

Salad
2 cans chickpeas, drained and rinsed
1 cucumber, chopped and quartered
20 cherry tomatoes, halved
1 onion, chopped
1 avocado, diced
⅓ cup carrots, shredded

PREPARATION
Dressing
1. Combine dressing ingredients in a small bowl. Whisk together until mixed thoroughly.

Salad
1. In a large bowl, combine chickpeas, cucumber, tomatoes, onion, avocado, carrots, and dressing.
2. Toss together until evenly combined.
3. Enjoy!
