Betty demonstrates how to make Mozzacado Salad. This recipe was created and sent in by Tori Durham of Burlington, Ontario, Canada. It is a terrific accompaniment for almost any meal. It is colorful and appealingâalso healthy and delicious!
Mozzacado Salad
Vegetables:
4 avocados, peeled and diced into large chunks.
1 package cherry or grape tomatoes, halved
1 small block mozzarella cheese, cut into small cubes
1 bunch of green onions, chopped
Dressing:
1/3 cup olive oil
Âź cup red wine vinegar
3 teaspoons Italian dressing
2 teaspoons lemon juice
2 tablespoons finely minced garlic
1/2 teaspoon freshly ground black peppercorns
Place avocado chunks, tomato halves, mozzarella cheese cubes, and chopped green onions in a large bowl. In a separate bowl, whisk dressing ingredients until thick. Pour dressing on top of vegetables and mix by hand. Spoon onto nice salad plates and serve immediately. YUM!
