How to Make Tiramisu Cupcakes ─ CupcakeJemma

Tiramisu is one of my favourite desserts and when I go to an Italian restaurant, I can't NOT order it! And it's so simple! So I thought I'd cupcake it up and this is my recipe. It's a big seller in our Crumbs & Doilies shop in Soho and when you make it, you'll see why. Make sure you try and use the strongest espresso you can get your hands on!

Recipe -
For the cupcakes...
125g self raising flour
125g caster sugar
125g soft unsalted butter
1/4 tsp bicarbonate of soda
2 lg eggs
1.5 tbsp very strong coffee, ideally espresso

For the filling...
75g double cream
1 tsp caster sugar
1.5 tbsp very strong coffee, ideally espresso

For the Mascarpone icing...
75g soft unsalted butter
120g mascarpone
420g icing sugar, sifted

Cocoa powder to finish!
