Sponge dosa are soft, spongy and light also known as set dosa. These are known as set dosa because these are served in sets of 3 dosa per serving. These are made from rice and urad dal. Do try this recipe at home and drop a comment for me. Do not forget to like, share and comment.

Ingredients:
• 2 cups Rice
• 1/4 cup Urad dal
• Fenugreek seeds
• 1 cup Thick poha
• 1/2 cup Curd / Yogurt
• 1/2 cup Water
• Salt to taste
• Oil

Method:
• In a bowl take rice and add urad dal.
• Mix well and wash it really good with water 3-4 times.
• Add fenugreek seeds and soak everything in enough water for at
least 5-6 hours.
• When rice and dal is about to get soaked, take thick poha into a
bowl and add curd, water.
• Mix well and soak the poha for just about 10 minutes.
• Transfer the soaked rice, dal soaked poha, and water into a
blender jar and blend it into a smooth batter.
• Transfer the blended batter into another pot.
• Add salt in the batter and mix well.
• The consistency of the batter should be a little runny and not too
thick.
• Cover and let the batter ferment for about 8-10 hours or
overnight.
• When the batter is well fermented mix it gently with a spoon.
• Heat up the pan on very high heat first and then lower down the
heat to medium.
• Add a little oil and spread it all over the pan.
• Wipe the oil with the help of tissue paper.
• This gives nice, even golden color to dosa.
• Add a ladleful batter on the pan and spread it gently.
• When the surface of the dosa dries out completely add some oil
around the dosa and flip it over.
• Cook the dosa from other side for just about 20-30 seconds.
• Take the dosa off the pan into a dish. Sponge dosa is already.
• Serve the sponge dosa with chutney.
