According to studies, done by clever people and advocated by the likes of David Attenborough, if all the bees in the world were to die tomorrow, the human race would only have about 4 years left to survive, such is their importance. It's a chilling thought! Especially with the knowledge that here in the UK, more than 50% of the population of native bees has fallen in the last 50 years. 50 per cent!!! To raise awareness, DEFRA started #BEESNEEDSWEEK and I wanted to make this video to tell you guys how important it is, through the medium of sponge and buttercream!
Recipe -
For the Honey Caramel...
105g caster sugar
170g strong flavoured, local honey
120ml water
200ml double cream
For the Honey Swiss Meringue Buttercream...
150g caster sugar
2 lg egg whites]200g soft unsalted butter
2-3 tbs strong flavoured local set honey
For the cupcakes...
155g self raising flour
1/4 tsp bicarbonate of soda
140g caster sugar
1/8 tsp salt
pinch ground nutmeg
about 1/2 tsp very finely chopped fresh rosemary
160g plain yoghurt
1.5 lg eggs
70ml olive oil
drop of vanilla
