Ingredients:
1000g (1KG) (2.2lbs) eggplant (about 3)
2.5 cups marinara sauce
1.5 cups cashews
1 garlic clove
1 lemon
1 tbsp nutritional yeast (optional)
salt/pepper
4 tbsp olive oil (1 for broccoli, 3 for eggplant)

TOFU RICOTTA
If you want tofu instead of cashews, just sub using 15 oz (420g) of tofu, the rest of the filling is the same with the garlic, lemon, nutritional yeast, salt and pepper.
