Roasted cocoa nibs must be ground using a wet grinder aka a chocolate melanger to reduce the size of particules to something extremely fine ( less than 20 microns ). Somewhere down my cooking journey, I learnt how to make Indian fritters called Medu Vada, and at that moment, I also discovered a machine that has proven itself to be super handy today...
Chocolate liquor recipe : (no alcohol whatsoever)
Ingredients :
- 66 grams of roasted cocoa nibs
- 7 grams of cocoa butter
- 27 grams of sugar.
Instructions :
Grind the S out of them. Bye.
