Vanjaram Fish Biryani ─ Vahchef - VahRehVah

Vanjaram Fish Biryani
Ingredients:
Vanjaram Fish(cleaned) - 1 Whole fish
Basmathi Rice - 400 g
Brown Onions - 1 cup
Turmeric - 1 tsp
Hing - 1 tsp
Chilli Powder - 1 tb spn
Lime Juice - 1 tb spn
Coriander powder - 1 tb spn
Coriander Stems - 1 bunch
Curry Leaves - 3 strings
Whole Garam Masala - 1 tb spn
Onion(chopped) - 2
Ginger garlic paste - 1 tb spn
Tomatoes(chopped) - 2
Green chillies(slit) - 4
Garam Masala - 1 tb spn
Coriander Powder - 1 tb spn
Cumin Powder - 1 tb spn
Red Chilli Powder - 1 tb spn
Coconut milk - ½ cup
Coriander Leaves - 1 bunch
Salt - As Required
Water - As Required
Oil - As Required

Method:
Firstly cut the fish as shown in the video. Marinate the fish well with salt,turmeric,chilli powder,ginger garlic paste and some lime juice,coriander powder. And also stuff the belly of the fish with coriander stems and a string of curry leaves. Now take a tawa add oil and place the fish carefully and cook it on both sides and remove it. Now add the leftover masala to the oil in the pan and also add water to it & keep aside.
Take a biryani handi, add oil,whole garam masala,onions,turmeric,ginger garlic paste,tomatoes,green chillies.Saute it for a minute. Now add garam masala,cumin powder,coriander powder,chilli powder and add water and check salt. In the last add coconut milk,coriander leaves and keep aside.
Now take a bowl add water to it and bring it to a boil add salt & oil. Now add basmathi rice and cook it till it is cooked for 70%. Now add it to the biryani handi layer by layer by adding brown onions and place the fish it on top of the rice and add gravy which was kept aside after frying fish. Serve Hot With Saalan.
