For the pastry stars
110g plain flour
50g cold butter
Pinch of salt
1 tbs cold water
Demerara sugar and an egg
For the cupcakes
125g self raising flour
125g caster sugar
2 tsp mixed spice
1/4 tsp ground ginger
1/4 tsp bicarbonate of soda
65g caster sugar
60 light soft brown sugar
75g mince meat
3 tbsp brandy-soaked currants
100g browned butter, left to cool completely
40g soft butter
2 lg eggs
1.5 tbsp milk
For the buttercream
150g soft butter
340g icing sugar, sifted
Zest of an orange
2 tbsp brandy
2 tbsp orange juice
