8 ounces Gruyere cheese, grated
1/4 cup canola oil
1 medium yellow onion, chopped (about 1 cup)
1 teaspoon granulated sugar
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon sherry vinegar
1 tablespoon dry onion soup and dip mix (such as Lipton Recipe Secrets)
1 French baguette
1 tablespoon unsalted butter
2 tablespoons chopped fresh thyme
