Brazilian Farofa, Bacon & Plantains ft. Rango Do Rafa #DinnerExchange ─ Alex French Guy Cooking

Recipe (courtesy of Rafa)

3 to 4 plantains
1 cup of finely diced onion
1 and 1/2 cup of manioc flour
100gr (or more) of bacon
Butter (around 2 tbps)
Finelly chopped coriander

-fry the diced bacon on low heat, cut the plantains into disks or half moon shape, and fry them in half of the butter together with bacon fat (you can remove a little fat of the bacon if you want) until light golden.
Then add onions and fry until soft, add the other half of the butter, then the manioc flour, salt and pepper, turn the heat down to low and stir until the flour absorb all this fat, takes about 3 to 5 minutes, then turn of the heat, add coriander, adjust the seasoning (depending on how salty is the bacon).
- The flour should be somewhere between hydrated and crunchy,
