I am visiting the fantastic fishing community of Yup'Ik Eskimos in the village of Emmonak, at the border of the Yukon river in Alaska! It is here where these fishermen and women fish for the very best sustainable, wild and natural Alaskan Keta (Chum) salmon! This wild, natural and MSC certified sustainable salmon is truly from the best quality you could think of and are caught with gill nets. This small scale fishing method makes sure there is enough salmon left for spawning upriver. With this ultra fresh Chum salmon, I am making a marinated wild salmon carpaccio! A perfect quick little dish to surprise yourself and your guests! Enjoy.
