For the Noodles
2 cups all propose flour, plus more for later
1/2 tsp salt
1 Tbsp oil
3/4 cup and 2 Tbsp hot boiling water
For the Broth
8 cups cold water

1/4 onion, sliced
1 small Yukon potato (approximately 4 oz), peeled and sliced into half moon

2 green onions, cut in half lengthwise then cut into 2-inch long pieces
For the Seasoning
