For this vegan curry pigeon peas you'll need...

5-6 cups shelled pigeon peas
3 1/2 tablespoon curry powder
1 tablespoon amchar massala
1 teaspoon tumeric
1 teaspoon roasted cumin (ground geera)
1 medium onion'5 cloves garlic (grated)
1/2 scotch bonnet pepper
1/2 cup water (foo cooking curry)
4-5 cups boiling water
1 tannia (2 potatoes will work)
3/4 teaspoon salt (adjust accordingly)
2 tablespoon Caribbean green seasoning
3 tablespoon veg oil
