My super simple One Pot Chicken and Vegetables is the kind of easy, comforting, home style dish that's perfect to throw together after a long, busy day. Ingredients:
8 Chicken Thigh Fillets (or any chicken pieces such as breasts, drumsticks, wings etc)
1 Large Brown Onion
1 Teaspoon of Crushed Garlic
2 Cups of Frozen Peas
3 Large Carrots
8 Baby Potatoes (aka Chat Potatoes)
4 Cups (1 Litre) of Liquid Chicken Stock
2 Tablespoons of Freshly Squeezed Lemon Juice
Freshly Cracked Black Pepper
Preparation Time: About 5 minutes
Cooking Time: About 40 minutes approx.
