VEGAN SAUSAGE RECIPE

** makes 6 to 8 sausages

1 C sliced onione (about 1 onion)
2 garlic cloves, roughly chopped
1 tsp fennel seeds
1/2 tsp chili flakes
4 tbsp vegetable oil
2 C vital wheat gluten
1 C crumbled firm tofu
1/4 C nutritional yeast
1 tsp sea salt
1 tsp ground pepper
1 tsp smoked paprika
1 tsp ground mustard
1 tbsp maple syrup
2 tbsp low-sodium tamari or soy sauce
1 tbsp tomato paste
1/2 tsp liquid smoke

Pre-heat oven to 350F

In a skillet over medium heat, saute the onion, garlic, fennel seeds, and chili flakes in 1 tbsp vegetable oil for 4 to 5 minutes until the onions are soft and translucent. Lower the heat as necessary to prevent the garlic from burning.

Add this mixture to a food processor along with 2 tbsp vegetable oil and 1 cup of vital wheat gluten and the remaining ingredients. Process until mostly combined.

Add the remaining 1 cup of vital wheat gluten and process until the dough comes together along the sides of the food processor and you don't see any large pieces of onion in the mixture.

Place the dough on a clean work surface and knead about 15 times until the dough is well combined, mostly smooth and very tough or glutenous.

Cut pieces of aluminum foil approx. 10-inches x 12-inches.
Cut the dough into 6 or 8 even pieces, depending on the size of sausages you want to make.

Form the piece of dough by hand into a log shape approx. 1 1/2-inches in width and about 4 1/2-inches long. Place it on the aluminum foil and and wrap it tightly around, then twist the ends in opposite directions to seal the foil firmly around the dough and shape it into a sausage.

Place all the wrapped sausages on a baking sheet spaced an inch apart and bake for 30 minutes until they feel very firm to the touch. Let cool for 20 to 30 minutes at room temperature. Refrigerate overnight.

To prepare the sausages for serving, heat a pan over medium heat with 1 tbsp vegetable oil and pan fry the unwrapped sausages for 5 to 6 minutes or until browned on all sides.
