Vegan Mac N Cheese: serves 4
1 butternut squash, peeled and cubed
1 medium white onion, quartered
½ cup raw cashews
1 clove garlic
½ teaspoon nutmeg
2 tablespoons olive oil
1 teaspoon yellow mustard
1 tablespoon salt
2 cups vegetable stock (480 mL)
1 lb elbow pasta or macaroni, cooked according to package instructions (455 g)

Kung Pao Chickpea: serves 4
1/2 red onion , chopped
1 red bell pepper , chopped
2 15 oz. cans, rinsed and drained
1/4 cup soy sauce
2 tablespoons balsamic vinegar
2 tablespoons maple syrup
1/2 teaspoon garlic powder (or 2 minced garlic cloves)
1/2 teaspoon ground ginger (or 2 teaspoons fresh minced ginger)
1 teaspoon red pepper flakes
1 teaspoon sesame oil
3 spring/green onions , chopped
sesame seeds, for garnish
Cooked white rice , for serving (or cauliflower rice)

Vegetable Bolognese: serves 4
2 tbsp. olive oil
1 onion (chopped)
3 cloves garlic (minced)
2 carrots (diced)
3 celery stalks (chopped)
1 red bell pepper (chopped)
15 oz. can tomato sauce
2, 14 oz. cans of diced tomatoes (undrained)
6 oz. can tomato paste
1/4 tsp. pepper
1/2 tsp. salt
1/4 cup basil leaves, roughly chopped
16 oz. box spaghetti
