Handawo is a Gujarathi recipe. This is a quick and easy recipe. It is healthy as we are adding veggies in it. This can be a good breakfast recipe too. Do try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.
Ingredients:
• 1 cup Coarse Sooji
• 1/4 cup Besan
• 1 cup Curd / Yogurt
• About 1/2 cup Water
• 1/2 cup shredded Carrot
• Diced Red bell pepper
• Diced Green bell pepper
• Finely chopped Coriander leaves
• 1/4 tsp Turmeric powder
• 1/2 tsp Red chili powder
• 1 tsp Coriander powder
• 1 tsp Ginger-Green chili paste (1/2" Ginger & 2~3 Green chilies
roughly blended)
• Few roasted Peanuts
• Salt to taste
• 1 tsp Eno fruit salt
• 1 tbsp Water
• 1 tbsp Oil
• 1/2 tsp Mustard seeds
• Curry leaves
• 1 tbsp Sesame seeds
• 1 tbsp Oil
• 1/2 tsp Mustard seeds
• 1/2 tsp Cumin seeds
• 1 tbsp Sesame seeds
• Few Curry leaves
Method:
• In a bowl take sooji. It should not be roasted but raw one.
• Add besan and mix well.
• Add curd and mix well.
• You can use buttermilk instead of yogurt.
• Add water and mix well.
• The consistency should be thicker and not very loose.
• Add carrot, red bell pepper, green bell pepper, coriander leaves,
turmeric powder, red chili powder, coriander powder, roasted
peanuts, salt and mix everything well together.
• Add spices before.
• Rest the batter for just about 10 minutes.
• Add eno fruit salt, water and mix it quickly.
• You can add 1/2 tsp Baking soda while adding yogurt if you don't
want to add eno.
• Heat up oil in a pan.
• Add mustard seeds and let them pop up.
• Add cumin seeds, curry leaves, sesame seeds and mix well.
• Add the batter in the pan and spread it around evenly.
• Cover and cook on lowest possible heat 10-15 minutes or until it
gets nice brown color from lower side.
• Turn off the heat and flip the pan over a dish.
• Heat up oil in the same pan.
• Add mustard seeds and let them pop up.
• Add cumin seeds, sesame seeds, curry leaves and mix well.
• Gently slide uncooked side of the handavo into the pan.
• Cover and cook for another 10 minutes over lowest possible heat.
• Flip over the pan into a dish. Handavo is already.
• You can have this handavo as it is.
