Ridge Gourd Masala Curry & Chutney
INGREDIENTS:
Oil - As required
Mustard seeds - 1 tsp
Cumin seeds - ½ tsp
Curry leaves - 1 spring
Onion - 2 nos.
Salt - As per taste
Ginger garlic paste - 1 tsp
Cumin (crushed) - ½ tsp
Garlic - 10 cloves
Turmeric powder - ½ tsp
Chana dal - 100 gms
Water - As required
Tomatoes - 2 nos.
Coriander powder - 1 tsp
Green chillies - 3 nos.
Ridge gourd - 250 gms
Coriander leaves - 1 bunch
Urad dal - 4 tsp
Red chillies - 5 nos.
DIRECTIONS:
Heat oil in a pan, add the mustard seeds, cumin seeds, curry leaves, onion, salt, ginger garlic paste, crushed cumin, garlic, turmeric powder saute it and until all raw flavour is gone.
Then add soaked chana dal, water cook it for till they are soft and add tomatoes, coriander powder, green chillies and add rich gourd cook it for till they are soft.
At last, add some coriander leaves cook it for some more time. Then switch off the flame.
Take rich gourd peel, urad dal, red chillies, coriander seeds, cumin seeds, curry leaves, tamarind, onion, curry leaves roast it and grind into a fine paste. Chutney is ready.
Tasty Rich Gourd Curry and Rich Gourd Chutney is ready to serve.
