Fishy friends! Today I'm preparing a gorgeous, colorful plate with perfect oily sardines. Cornish sardines to be precise. These tiny fish swim almost everywhere in the world, but the taste and look of the fish differ per location and period. Cornish sardines are my favorite! They are so rich in flavor, by the time they reach the Cornish coast, they're fully grown and fat. And that's how like 'em, fat! Warm sardines with roasted eggplant, so easy, so delicious. Try it!
