Here's how to make it:

Spiced *Exotic* Apricot Bourbon Sour
By Dan Magro

Ingredients:
2 ounces Bourbon
1 ounce Fresh Squeezed Lemon Juice
3 heaping bar spoons (or 1 tablespoon) Apricot Preserves
1 Egg White
Ground Cinnamon
Ice
Dried Apricots (optional)

Tools
Cocktail Shaker
Jigger
Mesh Sieve
Tiger Stripe Stencil

In a shaker combine bourbon, lemon juice, apricot preserves and egg white.

Dry shake the cocktail vigorously as long as you can, to fully incorporate the egg white with the other ingredients.

Add ice to the shaker and shake again, vigorously to chill and dilute the cocktail.

Strain into a coupe glass. You should begin to see the cocktail seperate into 2 layers

Take the tiger stripe stencil and place it over the cocktail.

Carefully pour the cinnamon into the mesh sieve and shake evenly over the cocktail. Carefully remove stencil to reveal a tiger stripe pattern on the foam.

Garnish with a dried apricot slice.

NOTES:
Make your own stencil by (carefully) cutting a tiger stripe pattern with a razor in cardstock.

To avoid the egg white or make it vegan, substitute aquafaba, which is the chickpea liquid you find in the can. Use about 2 tablespoons for the one egg in this cocktail.
