1/2 bunch of kale
2 cups cooked quinoa
1 can (15oz) chickpeas
2 cucumbers
1/2 cup kalamata olives
1 bell pepper
1/2 red onion
1 cup hearts of palm
1/4 cup pumpkin seeds
MACROS (4 servings)

1 tbsp olive oil
1 onion
4 cloves of garlic
1 can (15oz) coconut milk
2 tbsp curry powder
3.5 cups (28oz) crushed tomatoes
3 cans (45oz) chickpeas
1 tsp salt
4 - 6 cups of baby spinach
4 cups cooked jasmine rice
