BITTER GOURD BIRYANI : Bitter gourd Biryani or Bitter gourd Pulao what ever you may say, is the one which I planned to try long before.This is a very interesting version of it made with Bitter-Gourd. Oil as required 0 Caraway seeds 1 Teaspoons Bay leaf 1 Numbers Cardamom 2 Numbers Cloves 3 Numbers Star anise 1 Numbers Biryani flower 1 Numbers Maize 1 Numbers Onion 1 Numbers Salt as per taste 0 Red chilli powder 1 Teaspoons Mint leaves 1 Tablespoons Coriander leaves 1 Tablespoons Fresh coconut 1 Cup Lemon juice 2 Tablespoons Bitter gourd 5 Numbers Green chillies 5 Numbers Ginger garlic paste 1 Teaspoons Cumin powder 1 Teaspoons Coriander powder 1 Teaspoons Garam masala 1 Teaspoons Curd 1 Cup Water as required 0 Saffron colour 1 Teaspoons Fried onions 1 Cup Rice 1 Cup
1.Take a plate add grated fresh coconut,red chilli powder,lemon juice,
salt as per taste and mix it well.
2.Now take the bitter gourd cut into middle part and stuff the green chilli
and mixture of coconut.
3.Take a pan add oil,stuffed bitter gourd and cook it.
4.Add chopped onion,salt as per taste,ginger garlic paste,mint leaves,coriander
leaves,cumin powder,coriander powder,garam masala,curd,little bit of water and
cook it well.
5.Take another pan add water,salt as per taste,oil as required,whole garam masala
and let it boil.
6.Now add soaked rice and cook it 80% done.
7.After that transfer into the bitter gourd pan.
8.Add saffron colour,coriander leaves,mint leaves and fried onions.
9.Put on lid cook for 10 mins.
10.Serve with raitha.
