For the cupcakes -
125g self raising flour
125g caster sugar
125g unsalted butter, soft
2 lg eggs
1/4 tsp bicarbonate of soda
2 tbs whole milk
1/4 tsp vanilla extract
2 tbsp red, green and white sprinkles
For the Swiss Meringue Buttercream -
3 egg whites
225g caster sugar
340g very soft unsalted butter
1/2 tsp vanilla extract
extras -
red, green and white meringue poop
jam or goo to fill
Christmas sprinkles
glitter!
