RECIPE

Taiwanese Fried Chicken Bao
Ingredients
50ml Yuzu
200ml Japanese Mayo
50g Nori
50g Toasted white sesame seeds
50g Black sesame seeds
Coriander spring onions
Watermelon radish
Mirim
Rice vinegar
Sugar
Thai basil
For Chicken
600g skinless, boneless chicken thighs
400g/ml buttermilk
1.5 tsp mustard powder
1 inch ginger, grated
1/2 tsp five spice
1 1/2 tsp salt
Chili powder
1 1/2 tsp white or Szechuan pepper
1 tbsp garlic powder
125g rice flour
125 sweet potato flour

Method
1. Marinade chicken overnight in butter milk and mustard powder
2. Blitz nori in to a fine dust, add yuzu and Japanese mayo, set aside
3. Lightly and quickly pickle watermelon radish by combining the pickling liquor over
heat, cooling and then pouring over radish
4. Place coriander into ice water
5. Strain off excess buttermilk then dredge through the flour mixture of garlic powder,
chili powder, pepper, mustard powder, grated ginger, five spice. Fully coat then fry
in hot veg oil at
6. Serve by putting mayo on bottom, then chicken, then radish, sesame seeds and
coriander. Finish with seaweed if needed.
