FOOD BUSKER IS FILED AT SHEPHERDS BUSH MARKET, LONDON

INGREDIENTS

3 eggs Burford browns
1 knob of butter
2 large Spanish onions
1 tbsp brown sugar
2 brioche buns
400ml mayo
100 - 200ml sriracha (to your taste)
Handful of chopped chives
salt
pepper
2 slices of cheddar cheese

METHOD

1. Place sliced onions on a low heat in a saucepan with the tbsp of brown sugar and place the lid on. stir every 10 mins and cook down until brown and sweet
2. Mix the mayo and the sriracha together
3. Place eggs with butter into a non stick pan and place on medium heat. Fully mix the eggs and watch on heat until it starts to come together. For the last 20-30 seconds take the eggs off the heat and allow the residual heat in the pan to finish off the eggs
4. Put sriracha mayo onto toast brioche bun, then add the scramble eggs on top.
5. Place the cheese onto a heated sauce pan to melt one side then flip on to the scrambled eggs, melted side up.
6. Top with the onions and a little more mayo on to the brioche top and boom serve immediately
