Another batch of the little ones for you, but this time, turning one of my favourite pies in to cupcakes...Mini Banoffee Pie Cupcakes, to be exact! Make sure you're saving those brown bananas!
Recipe -
For the toffee sauce
75g soft brown sugar
75g unsalted butter
200g condensed milk
For the buttery biscuit base...
85g pulverised digestive biscuits or graham crackers
1/2 tbsp Golden Syrup
15g melted butter
For the Cupcakes...
65g soft unsalted butter
70g self raising flour
1/4 tsp bicarbonate of soda
50g caster sugar
10g dark soft brown sugar
65g mashed ripe banana
1 lg egg
1/2 tbsp milk
For the Toffee Buttercream...
100g soft unsalted butter
225g icing sugar, sifted
1 tbsp milk
1 big blob of toffee sauce
To decorate...
More toffee sauce
Chocolate shavings
