Today we're going to show you how to make the Aviation, a classic cocktail with a beautiful color. But, for march madness we'll be pitting a traditional aviation cocktail against an aviation variation with Creme de Cassis. Who wins?

If you're a fan of the gin drink known as the Aviation you're gonna want to give the creme de cassis variation a try. Of course, the colors are completely different but the tastes are nuanced and different as well. Where the aviation brings in the floral notes along with a fairly intense gin-forward flavor the creme de cassis aviation brings in more fig notes, a bit of jammy flavor along side that dry gin power.
Both aviation cocktails are dry, both have central flavors that come in similar but that slight twist on cassis vs. violette makes a huge impact on color and flavor. Of course, we use Aviation gin on this one just because it made sense.
The Aviation
- 2 oz Gin
- 0.75 oz Fresh Lemon Juice
- 0.5 oz Maraschino Liqueur
- 0.25 oz Creme de Violette
