If you're in need of some killer fall side dishes then these "Greens For Fall" will hit the spot! I got a chance to use some of the produce they have to offer and whipped up some serious side dishes for fall that will also be a hit for the upcoming holidays. I have to say, the green beans are probably my favorite of the mix (the broccoli & cheddar béchamel is a close second) and would be INCREDIBLE with braised chicken, mash potatoes and gravy! INGREDIENTS:

Grilled Asparagus w/ Citrus and Herbs:
1lb large asparagus
2 tbsp olive oil
1 whole lemon, zested
2 tbsp lemon juice
1 tbsp rosemary, chopped
1 handful of torn parsley leaves
salt and pepper to taste


-Roasted Broccoli w/ Cheddar Béchamel:
1lb brocoli florets
3/4 cup water (for steam)
1 cup milk
1/4 cup cream
3 tbsp butter
2 tbsp flour
1 1/2 cups cheddar cheese, grated
salt and pepper to taste

-Steamed green beans with creamy vinaigrette
1lb fresh green green beans
3 tbsp olive oil
3-4 tbsp water
1/2 cup cream
1/4 cup red wine vinegar
1 tbsp yellow onion, minced
1 tbsp tarragon, chopped
1 tbsp flat leaf parsley, chopped
salt and pepper to taste


-Pan-roasted Snap Peas with Lemon-Garlic Butter:
1lb sugar snap peas
2-3 tbsp butter
2 tbsp chopped garlic (green garlic is preferred, usually at farmers markets)
2 tsp lemon zest
1 lemon, juiced
salt to taste
