INGREDIENTS:

3 whole eggs
1 large Yukon gold potato, small dice
2 slabs of extra thick cut applewood smoked bacon, small dice
2 tbsp butter (split between potatoes and herb butter)
1 tbsp sliced green onion
1 slice cheddar cheese
1 tsp chopped rosemary (for herb butter)
1 tsp chopped thyme (for herb butter and potatoes)
