Betty demonstrates how to make Cheddar Onion Potato Bake. This is a cheesy potato casserole that is made from mashed potatoes, French fried onion rings, and Cheddar cheese.
Cheddar Onion Potato Bake
2 ½ cups leftover mashed potatoes (You may use instant mashed potatoes following the instructions on the package to make 2 ½ cups or purchase a 24-ounce package of refrigerated mashed potatoes at your grocery store.)
1 well-beaten egg
2.8-ounce can French fried onion rings
¼ teaspoon salt
½ cup shredded Cheddar cheese
In a medium- to large-sized bowl, mix together all ingredients. Spoon mixture into a 2-quart oven-proof baking dish. Bake, uncovered, for 18 minutes at 350 degrees (F), switching to “Broil” for 2 additional minutes. Cheese will be melted and the top will be beginning to brown. Remove from oven and serve immediately. This is a delicious side dish to accompany almost any entrée. Enjoy! --Betty :)
