Betty demonstrates how to make Pumpkin Dessert Squares. These sweet treats are great to serve with dinner or as a snack in the fall or during holiday season.
Pumpkin Dessert Squares
First layer:
cooking oil spray
1 box yellow cake mix (Reserve 1 cup.)
1 stick butter, melted
1 egg
In a large mixing bowl, mix together cake mix (minus 1 cup), butter, and egg. Spread evenly in a 13-inch by 9-inch by 2-inch baking dish that has been sprayed with cooking oil spray.
Second layer:
1 pound can pumpkin pie mix (This is the flavored pie mix, not just pumpkin puree.)
2 eggs
2/3 cup milk
Mix the pumpkin pie mix, the 2 eggs, and milk. Pour over the first layer.
Third layer:
1 cup reserved cake mix
1 teaspoon cinnamon
½ cup sugar
¼ cup butter, softened
½ cup chopped pecans
Mix reserved cake mix, cinnamon, sugar, butter, and pecans. Sprinkle over pumpkin layer.
Bake at 350 degrees (F) for 1 hour, or until a toothpick inserted in the center comes out clean. Cool and cut into squares. YUMMY! –Betty
