1 cup gluten-free baking flour (about 5 ounces)
1/3 cup cornmeal
3/4 teaspoon baking powder
1 1/2 teaspoon table salt, divided
1/2 teaspoon baking soda
4 large eggs ,divided
8 tablespoons salted butter, melted
cooking spray
2 tablespoons canola oil
6 ounces bacon, chopped
2 cups chopped onion
1 1/2 cups chopped carrot
1 1/2 cups diagonally sliced celery
1 cup chicken broth
1/4 cup chopped fresh flat-leaf parsley
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh sage
1 teaspoon ground black pepper
