OMG it's EASTERRRR! Frankly, for me the best thing about Easter is Hot Cross Buns and this year I thought I'd make my own. It's super easy and very satisfying AND they might just be the best HXB I've ever had, gosh darnit! Stick around for some extra special Easter treats at the end of the video!

Recipe...
500g strong white bread flour
10g instant dry yeast/quick yeast
2 tsp salt
50g caster sugar
2 tsp mixed spice
1 tsp cinnamon
1 lg egg
50g soft unsalted butter
350ml water at room temp
300g of dried fruit/mixed peel
Extra flour for kneading
For the cross...
75g plain flour
25g veg oil
75ml water
Apricot jam for glazing!
