1 teaspoon plus 1 pinch of kosher salt, divided
8 ounces Uncooked penne pasta
2 tablespoons Salted butter
1 pound Fresh deli pizza dough, at room temperature
8 ounces Low-moisture mozzarella cheese, shredded (about 2 cups)
1 1/4 ounce Parmigiano-Reggiano cheese, finely grated with a Microplane grater ( about 3/4 cup)
2 tablespoons Chopped flat leaf parsley
