180ml Sweet Rice, mochigome (6.1 fl oz) (before soaking)
180ml Water, combined with shrimp liquid (6.1 fl oz)
80g Pork Shoulder, cut into 1cm cubes (2.8 oz)
1 tsp Sake
1 tsp Soy Sauce
8g Dried Shrimp, dehydrated with 2 tbsp lukewarm water for 30 minutes (0.3 oz)
70g Shimeji Mushrooms (2.5 oz)
8 Shelled Amaguri Chestnuts
2 tsp Ginger Root, minced
1 tsp Sesame Oil
2 Spring Onion Leaves, chopped
Vegetable Oil for sauteing
- Seasoning -
1/2 tbsp Soy Sauce
1/2 tbsp Oyster Sauce
1/2 tbsp Sake
1 tsp Sugar
Pepper
2 tbsp Water
