Bitter gourd curry is a family friendly side dish which is famous for its unique taste among vegetarians. The dish is made up of bitter gourd which of course is bitter but is fried well to remove its bitterness. It is then made into a curry that looks delicious as an accompaniment.
Ingredients: Fenugreek seeds 1/2 Teaspoon Cumin seeds 1/2 Teaspoon Dry coconut pieces 4 Numbers Tamarind 1 Teaspoon Sesame seeds 1 Teaspoon Oil as required Bitter melon 15 Numbers Mustard seeds 1 Teaspoon Cumin seeds 1 Teaspoon Dry red chilies 3 Numbers Turmeric powder 1 Teaspoon Curry leaves 2 Stricks Onion 1 Numbers Red chili powder 1 Teaspoon Water as required Salt as required Ginger garlic paste 1 Teaspoon Jaggery 1 Teaspoon Coriander leaves 1/2 Cup Wild Bitter melon (slices) 1/2 cup Coriander seeds 1 teaspoon
Method:
Take a pan, add coriander seeds, fenugreek seeds, cumin seeds, dry coconut pieces, tamarind, sesame seeds. SautÄĹ it for 2 to 3 minutes.
Then take a blender add these ingredients and make it into a coarse powder and keep aside.
Now take a pan, add oil, bitter melon along with wild bitter melon pieces and fry it.
After that transfer to a plate and keep a side.
In the same pan add mustard seeds, cumin seeds, dry red chilies, turmeric powder, curry leaves, chopped onion and cook it well.
Add red chili powder, water, salt and cook it.
Then add ginger garlic paste, sesame seeds powder that we have prepared at start and jaggery and mix it well.
Add fried bitter melon and wild bitter melon pieces and cook it.
Add chopped coriander leaves and cook it.
Serve with rice.
