BRINJAL PULIHORA RICE RECIPE ─ Indian Master Chef

Ingredients: Oil as required Brinjal 1 Numbers Mustard seeds 1 Teaspoon Cumin seeds 1 Teaspoon Dry red chilies 3 Numbers Peanuts 1 Tablespoon Chana dal 1 Tablespoon Urad dal 1 Tablespoon Ginger Small Curry leaves 3 Stricks Turmeric powder 1/2 Teaspoon Hing Pinch Green chilies 4 Numbers Tamarind pulp 1 Cup Fenugreek powder 1/2 Teaspoon Coriander powder 1/2 Teaspoon Sesame powder 1/2 Teaspoon Salt as per taste Rice 1 Cup Red chili powder 1/2 Teaspoon




Method:
Take a pan, add oil. After heating the oil, add chopped eggplant brinjal and let it fry. Then transfer to a plate and keep aside.
Soak the tamarind in warm water for 30 minutes, then nicely squeeze and extract the pulp. Keep this also aside.
In the same oil, add mustard seeds, cumin seeds, dry red chilies, peanuts, chana dal, urad dal, chopped ginger, curry leaves, when mustard seeds splutter, add turmeric powder, hing, green chilies and stir it for about a minute.
Then add tamarind pulp, fenugreek powder, coriander powder, salt, red chili powder and stir and cook till the mixture become a thick and when oil begins to saturate.
To it, even add chopped brinjal and sesame seeds powder and mix it well. Switch off the flame and let it cool in its steam.
Mix the above mixture with the rice till it blends nicely with rice.
