PANNER RIDGE GOURD COCONUT MILK CURRY :
Ridge gourd, also known as chinese okra or torai is one of my favourite dishes. Once the cubes are soft and cooked, Ridge gourd gravy is a great accompaniment to chapati, parathas and rice. This is a curry made predominantly by Gujarati Indians, however many Indian. Here is the recipe for how my Gujarati family cook turia.
Ingredients: Paneer 100 Grams Ridge gourd 3 Numbers Onion 1 Number Oil as required Mustard seeds 1 Teaspoon Cumin seeds 1 Teaspoon Curry leaves 3 Springs Hing 1 Teaspoon Turmeric powder 1 Teaspoon Green chilies 4 Numbers Fresh coconut paste 1/2 Cup Ginger Small Milk 1 Cup Coriander powder 1 Teaspoon Salt as per taste
Method:
Chop paneer, ridge gourd, onion into small pieces.
Take a pan, add oil, mustard seeds, cumin seeds, chopped onion, curry leaves, hing, turmeric powder, chopped green chilies, chopped ridge gourd and cook it well.
Now add fresh coconut paste, milk, mix it well and cook it. And add chopped ginger, coriander powder and cook it with closed lid.
Add salt, chopped paneer, milk and cook it for 3-4 minutes.
Serve with pulka or chapathi.
